Are you hungry 24/7 in this quarantine or is it just me? Also I miss New York bagels with an alarming frequency. If you’re feeling either of these you can make a gluten-free healthy (but like, for real delicious) version with pantry staples the next time you’re dying for a snack. Pre-heat your oven to 450 degrees. Slice 2 sweet potatoes about 1/2” thick and add them to a bowl along with 2-3 tbsp of olive oil, toss until coated. Drizzle some olive oil on a baking sheet if you don’t have spray like me. Lay out your slices on your sheet and bake for 15 minutes. Pull out and add Everything But the Bagel seasoning, and bake for another 10. While they baked I made my own dairy-free ranch dip with 1 cup of mayo, a little coconut milk, and 1 tablespoon each of parsley, dill, and chives from my garden. Together this was legit self care and satisfied my hormone-fueled NEED FOR FOOD yesterday. Today the pain is even higher and productivity is at a zero so those leftovers might even taste good with eggs for breakfast I DON’T KNOW, GUYS.
