Love in the time of Covid AKA NO HAIRCUTS
Are you hungry 24/7 in this quarantine or is it just me? Also I miss New York bagels with an alarming frequency. If you’re feeling either of these you can make a gluten-free healthy (but like, for real delicious) version with pantry staples the next time you’re dying for a snack. Pre-heat your oven to 450 degrees. Slice 2 sweet potatoes about 1/2” thick and add them to a bowl along with 2-3 tbsp of olive oil, toss until coated. Drizzle some olive oil on a baking sheet if you don’t have spray like me. Lay out your slices on your sheet and bake for 15 minutes. Pull out and add Everything But the Bagel seasoning, and bake for another 10. While they baked I made my own dairy-free ranch dip with 1 cup of mayo, a little coconut milk, and 1 tablespoon each of parsley, dill, and chives from my garden. Together this was legit self care and satisfied my hormone-fueled NEED FOR FOOD yesterday. Today the pain is even higher and productivity is at a zero so those leftovers might even taste good with eggs for breakfast I DON’T KNOW, GUYS.

How off is your sleep right now? If it’s all out-of-whack like mine I FEEL YOU. Our bodies are responding differently to this new level of stress and fear and self care isn’t always a face mask sometimes it’s a nap. I usually pass out before 10pm and arise at dawn because apparently now I’m my dad, but these last few weeks of being in a global pandemic (like, seriously this shit is cray) a combo of hyper vigilance and anxiety has me UP at night and sleeping in longer. I feel weird about it but IT’S OKAY. Our bodies need what they need right now to process the global grief we are experiencing. Maybe my body needed to type that out to process it or maybe I’m just tired but either way I’m rolling into this weekend like this little Turnip.
Using this time wisely by cooking and solving crime.
We walked our dogs safely away from everyone yet still connected to humanity by these homemade messages on the trees in our neighborhood. ❤️
Not sleeping and trying to grow my own food in any way possible is how my anxiety decided we’re going to ride this one out.
We are all in this together. Be sure to thank the brave grocery store workers who are putting themselves on the line for us as they have earned deserve deep gratitude. I thanked as we shopping for 3 immunocompromised households with 3 lists, 2 carts, 2 humans clad in gloves and DIY project masks from years past. No toilet paper to be found but solidarity among strangers saying “We are all in this together.” Yes we are. ❤️ We are taking very strict precautions of course. Basically I need a Silkwood shower now. Anyone?
